Banitsa

500g filo pastry sheets, 5 eggs, 400g yoghurt, 1 tsp soda, 150g crumbled cheese, 150ml sparkling water, 50ml oil

Grease a tray with oil. Beat the eggs, milk and soda. Cover the tray with two crusts and spread the mixture on top, then two crusts, mixture and crumbled cheese and so on until you run out of fillings. Cut the banitsa into pieces and pour the remaining filling into the slits. Drizzle a little oil on top and pour the sparkling water over the edges. Preheat oven to 160 degrees and cook.

6 tbsp yoghurt, 2 tbsp baking powder, 2 eggs, pinch of salt, 6 tbsp oil, 100g grated cheese, 100g grated cheese, pinch of samardal, 6 tbsp flour

In a bowl mix the yogurt, baking powder, oil, salt and samardala. Stir well and add the beaten egg, the cheese and the kashkaval and finally the flour. Spoon a tablespoon of the mixture into a frying pan with oil and fry until golden on both sides.
